Roasted Vegetable Pasta

Ingredients
1 eggplant
1 large zucchini
1 large red onion
6 cloves garlic (whole)
1 large red pepper (de-seeded)
3 tbsp olive oil
12 cherry tomatoes
3 cups dry pasta spirals or pasta tubes
4 tbsp low-fat sour cream or crème fraiche
2/3 cup mature cheddar cheese (grated)
1 tbsp wholegrain mustard
salt and pepper

Preparation steps
Preheat the oven to 400°F (200°C). Slice the eggplant, zucchini, and red pepper into bite-sized chunks. Cut the onion into 8 wedges.
